The gaiwan is a special tea brewing vessel from China. The lid of the gaiwan keeps the tea leaves in the cup and allows the tea to be drunk from the gaiwan itself or decanted to a pouring vessel or to smaller cups to share with guests. The saucer insulates the bottom of the cup so that it can be handled when hot.
To use, rinse the gaiwan with hot water to warm it. Fill the bottom of the cup with loose tea leaves (about a teaspoon to begin) and add hot water. Quickly pour out the water. This rinses the tea and allows the tea to expand, especially for tightly rolled tea leaves. You can smell the aroma of the leaves at this point to appreciate it. Fill again with hot water and steep according to recommendations. You will know how long to steep with experience. To decant the tea, put saucer, cup and lid in one hand, position the lid slightly open on one side (just enough to pour out the liquid and retain the tea leaves in the cup) and hold in place with the thumb. Pour into pitcher or individual cups and enjoy.
